Oolong and black teas allow this to proceed as they dry, whereas in Japanese Green Tea this oxidation is skillfully halted.

  Organic Hojicha- When new leaves have grown back after the first spring harvest they are picked for Hojicha. The leaves are steamed, rubbed and partially dried, just as they are for Green Tea. Before they are completely dried, they are placed in iron cauldrons to be slowly and repeatedly heated and cooled until an experienced master senses that they are perfectly roasted. This manner of preparation allows subtle interaction between the iron of the wood fired cauldrons and the tea leaves.
